Halloumi

Halloumi is an ancient cheese from the Mediterranean. One of its earliest mentions is in a 14th century Egyptian cookbook. This one is made in Cyprus of blended cow, goat, and sheep milk. Still produced in small batches, the curds are hand-filled into individual molds and turned by hand. After being hand-folded into a rectangular shape, each cheese gets a sprinkling of local mint, per tradition.

Myzithera

Mizithra or myzithra (Greek: μυζήθρα [miˈziθra]) is a Greek whey cheese or mixed milk-whey cheese from sheep or goats, or both. It is traditional sold as a fresh cheese, similar to Italian ricotta, and as a salt-dried grating cheese, similar to Italian ricotta salata.
