TERTIS SALAD

INGREDIENTS:

  • Approximately 1 cup Kryssos feta, cut into 1-inch cubes

  • 1 cup watermelon, cut into 1-inch cubes

  • 1/4 medium cantaloupe, cut into 1-inch cubes

  • 1/4 medium honeydew melon, cut into 1-inch

  • cubes

  • 2 mini or Persian cucumbers, cut into 1-inch lengths (trim sides if needed for even stacking)

  • 6–10 radishes, cut into cubes roughly 1 inch in size

    HOT HONEY AND LIME DRESSING:

  • 2–3 tbsp hot honey

  • Zest of 1 lime

  • 3 tbsp fresh lime juice

  • 1/4 cup olive oil

  • Generous pinch of salt and pepper

    GARNISH OPTIONS:

  • Edible flowers

  • Fresh herbs (e.g., mint, basil, or parsley)

  • Kalamata olives

  • Thinly sliced red onion

  • Additional salt and pepper, to tast

DIRECTIONS:

  1. Combine all dressing ingredients in a small jar with a lid. If the honey isn’t runny, microwave itfor about 20 seconds before adding. Shake the jar well until fully combined. Taste and adjust seasoning as needed.

  2. On a platter, arrange the cubes of watermelon, cantaloupe, honeydew, cucumbers, radishes, and feta in a neat, Tetris-like pattern for a playful presentation.

  3. Drizzle the salad with the hot honey-lime dressing. Finish with your chosen garnishes and serve immediately.
